Now the exact content may change based on what is precisely tickling our fancy when the season arrives, but right now we’re thinking of dipping into the world of chocolate and fudge, saying hello to candied fruit and jellies, taking a detour with marshmallows, and for those who crave a little salt with their sweets, we feel like it wouldn’t be right not to rustle up a few irresistible party bowls of spiced nuts and brittle. We like to consider the confectionary umbrella as one that also includes petite fours that are as delightful to look at as they are to eat, so don’t be surprised if we tempt you with miniature cakes or biscuits that perform particularly well with a cup of tea at the end of a meal. Yes, some processes take time and we’ll be sure to show you all the steps involved and give you clear references and reminders to help you plan your own candy-filled adventures at home. Spoiler alert! Don’t be surprised if you find yourself reaching for these recipes long after Christmas has come and gone because everything tastes and looks so tempting. (And if so, please make an extra batch for us!) Please do remember though – baking is so much more than just about the results. When we’re lucky enough to welcome a Guest Chef to the school, we can’t help but get a little giddy with anticipation. And when Stephen Gibson joins us, it’s always a particularly wonderful day. Head Chef and proprietor of the one-and-only Pichet on Trinity Street in the city centre, Stephen embodies the rare combination of being both a naturally gifted chef and terrific teacher.
Stephen started his culinary career in Paris at the renowned Michelin two-starred restaurant and brasserie Fauchon before returning to Dublin to work briefly with Paul Flynn in Balzac. Following a spell at Nico’s on Park Lane, he then moved to Gothenberg, Sweden for a couple of years before arriving back in Dublin to work at L’Ecrivain with Derry Clarke for 9 years. Wanting to create his own special place, the kind of restaurant that serves the simple yet fabulous food he loves to eat when dining out, Stephen opened up Pichet in 2009. He calls Pichet a modern take on a classic bistro and whenever you eat his food, it feels and tastes that way: direct, delicious, and full of spark. Come join our lucky group of students today. On this course, Stephen brings everything to the table as he shares his favourite dishes and reveals his own personal views, ideas, and techniques on how to make your food shine. Unfailing in his generosity as a teacher, after spending a day cooking with Stephen you’re bound to return to your own kitchen fully inspired.
