    Our One Month (4 Week) Certificate cookery course is packed full of hands-on cooking, inspiring recipes, the latest techniques and most importantly, it’s lots of fun! The course attracts people of all nationalities, ages and abilities with the school’s state-of-the-art facilities providing you with a relaxed and sociable learning environment.

    The One Month course runs four times a year (January, April, July and September). If you’re interested in this course, we would encourage you to come and visit us at the school so that we can take you on a tour and answer any questions that you might have. We also offer a free trial course to any student interested in signing up to the course to give you the chance to experience our facilities, recipes and teaching approach. Come to Dublin and immerse yourself in cooking with our One Month (4 Week) Certificate cookery course

When Lynda Booth put this course together, she wanted to bridge the gap between home cooking and professional kitchens by offering students a unique experience. The One Month Certificate course that the cookery school now offers as a result, is a full-time intensive four week course, every day of which is packed full of hands-on cooking, inspiring recipes, the latest techniques and more importantly, lots of fun!

The feedback on the course from past students has been hugely positive and word of mouth has been a key factor in its continued success and one of the main reasons that the cookery school has been  voted ‘Best Cookery School in Ireland’ in 2013 & 2015 – Irish Restaurant Awards.

This cookery course attracts a wide mix of people and abilities from a range of backgrounds from Ireland and abroad, which makes for a friendly and collaborative learning environment. Each day, you’ll be working with the best fresh local produce in our state-of-the-art kitchen facilities and will be helped every step of the way by Lynda and her team of inspirational, enthusiastic and patient tutors.

By the end of the course, your confidence in the kitchen will have come on leaps and bounds and you’ll have learnt, cooked and developed a whole bible of recipes that you can take away with you and which you can return to time and time again. And, should you wish to pursue a career in the food industry, this course will provide you with an excellent foundation on which to build a culinary career for yourself.

This was a hugely enjoyable month of cooking and learning. It was something that I had wanted to do for a long time and I am so grateful to have had the opportunity to learn from such experienced, enthusiastic and patient teachers.

IMG_2341How is the One Month Certificate cookery course structured?

Every day on the One Month Certificate course is a combination of demonstration and hands-on cooking. Each afternoon, you will watch a cookery demonstration of a number of recipes. The following morning, you will recreate these recipes in the hands-on kitchen, under the watchful eye of Lynda and her team. It’s not just a matter of producing great food, but having a chef at your elbow teaching you how to taste, to develop your technique, to improvise and to present your finished dish creatively.

After a morning at the stove, everyone sits down in our beautiful dining room to enjoy what they have prepared, compare notes and, above all, take a well-deserved break. The learning environment is both supportive and challenging. Any concerns about the level of cooking skills are dispelled by the informality of the supportive learning environment.
