    When we’re lucky enough to welcome a Guest Chef to the school, we can’t help but get a little giddy with anticipation. And when Stephen Gibson joins us, it’s always a particularly wonderful day. Head Chef and proprietor of the one-and-only Pichet on Trinity Street in the city centre, Stephen embodies the rare combination of being both a naturally gifted chef and terrific teacher.

    Stephen started his culinary career in Paris at the renowned Michelin two-starred restaurant and brasserie Fauchon before returning to Dublin to work briefly with Paul Flynn in Balzac. Following a spell at Nico’s on Park Lane, he then moved to Gothenberg, Sweden for a couple of years before arriving back in Dublin to work at L’Ecrivain with Derry Clarke for 9 years. Wanting to create his own special place, the kind of restaurant that serves the simple yet fabulous food he loves to eat when dining out, Stephen opened up Pichet in 2009. He calls Pichet a modern take on a classic bistro and whenever you eat his food, it feels and tastes that way: direct, delicious, and full of spark. Come join our lucky group of students today. On this course, Stephen brings everything to the table as he shares his favourite dishes and reveals his own personal views, ideas, and techniques on how to make your food shine.     Wondering how to bring all those fit food facts to life? We’ll help you break it all down so that you eat well too. Designed to help you get the most out of your workouts and aid in your regeneration afterwards, our full day course is inspired by 12 ingredients known to be fantastic, easy to access fitness strengtheners and conditioners.

    What are fitness strengtheners? Otherwise known as carbohydrates with a low GI (Glycemic Index) value, these are the carbs that are more slowly digested, absorbed and metabolised by our body. You might even think of them as long-term stocks in energy supply—certain investments but slow growing to help ensure a stable, lasting energy-fund. These foods result in more carbs being stored in muscle rather than fat while keeping the hunger at bay. Think legumes and whole grains, pasta, sweet potatoes, yogurt, and nuts, all of which assimilate at a gentler rate.

    At the other end of the spectrum we have our fitness conditioners also known as high GI carbs and we’ll touch base on those too. Often overlooked as empty calories, high glycemic foods can in fact enhance your recovery after training but it’s all about timing. Think of these as your penny stocks – short-term investments strategically planned to very quickly yield the most return out of the smallest output. If eaten in moderation soon after training, these foods are swiftly absorbed by the body offering strong insulin response which gives us a head start on refreshing the depleted nutrient levels in fatigued muscles. The key though is to stay away from the highly processed versions and stick with foods in this category that are deliciously natural. Think honey, dried fruit, puffed rice, and specific vegetables such as potatoes, carrots, and peas.

    Equipped with this simple foundation, today is about bringing food fitness theory to life.  While the back story always provides context, we know that this particular spectrum is a moveable feast. You’ll be pleased to know that the way you prepare your foods can substantially influence their Glycemic Index. So let’s spend the day going beyond the facts. While we love the idea of the eat-drink-and-be-merry approach, the reality is, someone’s got to do the cooking! So what we’ve done to help you out is create a flexible menu blueprint full of helpful tips bound to make throwing together a memorable soirée as easy and elegant as you would like it to be. The key components? A stress-free plan, do-ahead recipes, beautiful platters that require minimal cleanup, and brilliant little tidbits that freeze perfectly and defrost with excellent, sharable, pop-in-your-mouth-ready results.
