Need a little inspiration to help lift your favourite vegetables to starring roles this holiday season? Looking for that unique wow-factor to add to the table, something no one will anticipate? We’ve got you covered now. Get ready to make room on stage for vegetable centric platters that bring our gorgeous produce front and centre, dishes that look and taste as glamourous and distinct as the occasion requires.

This festive menu will tempt all eaters, full-fledged vegetarians and otherwise, and we’ll give you plenty of advice on how to put your own personal twist on it too. We’re not talking about treating vegetables like understudies suddenly pushed into the limelight without thought or reason. We’re talking about taking the naturally delicious and dynamic flavours inherent in our favourite vegetables and going out on the town with them. Who’s invited to the party? Well you’ll meet plates that pop with brightness as well as dishes that are layered with luscious, savoury notes. We’ll whip up a few delicate little tasters sure to get your special night started off right and then move onto something more assertive and showy to help give your menu good range. From canapés and starters to mains and side dishes, we’ll dance the whole track today. So step into our kitchen for a transformative day of cooking sure to leave even the most meat-loving guest searching for seconds. At the end of it all, we’ll enjoy our divine spread in our own private dining room with a glass of wine in hand and fine company surrounding us. Vegetables never tasted so good.

Set aside the day to play in the kitchen with us because nothing says ‘Thank you’ or’ I think you’re fab!’ like a personalized gift.  We’ll whip up a fantastic list of marvellous little treats and sweets and turn them into specially crafted tokens for your Someone Special this holiday season.

In our opinion, the most tantalizing gifts are those that you can eat. Now the fact that we are chefs might suggest some personal bias here, but we know you can’t deny it. The most popular fellow in the office is inevitably the guy with the home-baked goods. Well, we see no reason to stop there. Today we’re going to make our special holiday hamper well-rounded and fill it up with a whole gamut of our favourite flavours. From pickles and relishes to salty snacks and happy little confectionaries, we’re sure to take care of a few lucky names on that long Christmas Gift List of yours. So let’s roll up our sleeves and put on our designer hats. Whether you choose to package the fruits of your labour individually or create a little basket-to-go, you’ll have complete freedom to add your own very unique stylistic touch. And don’t worry. We won’t tell if you decide to keep this beautiful collection of goodies at home instead. Wine, supplies, and good times included.

Nothing creates quite the same sense of belonging and ease as a table full of home-made treats fresh from the oven. When we start to edge towards the holiday season however, there is something extra magical about all the sweets that dance around us. What better reason to carve out a day in our gorgeous kitchens than to drastically increase these sweet reserves to share freely with others at whim?

Inspired by the playfulness and nostalgia of our collective Christmases of past, we’ve planned this special day of baking all around our most sincere and joy-inducing holiday baking fantasies. From picture perfect biscuits to delicate meringues, plumped up syrup cakes, lavish tray bakes, and perhaps even a great bread wreath for the table, we’re conjuring a very welcoming and well-rounded menu so that you have plenty of goodies to take home with you. Spoiler alert! Don’t be surprised if you find yourself reaching for these recipes long after Christmas has come and gone because everything tastes and looks so tempting. (And if so, please make an extra batch for us!) Please do remember though – baking is so much more than just about the results. It’s a tactile, sensory experience that gets you engaged every step of the way so get ready to get (deliciously) personal. Lunch, wine, and new friends included.

When we’re lucky enough to welcome a Guest Chef to the school, we can’t help but get a little giddy with anticipation. And when Stephen Gibson joins us, it’s always a particularly wonderful day. Head Chef and proprietor of the one-and-only Pichet on Trinity Street in the city centre, Stephen embodies the rare combination of being both a naturally gifted chef and terrific teacher.

Stephen started his culinary career in Paris at the renowned Michelin two-starred restaurant and brasserie Fauchon before returning to Dublin to work briefly with Paul Flynn in Balzac. Following a spell at Nico’s on Park Lane, he then moved to Gothenberg, Sweden for a couple of years before arriving back in Dublin to work at L’Ecrivain with Derry Clarke for 9 years. Wanting to create his own special place, the kind of restaurant that serves the simple yet fabulous food he loves to eat when dining out, Stephen opened up Pichet in 2009. He calls Pichet a modern take on a classic bistro and whenever you eat his food, it feels and tastes that way: direct, delicious, and full of spark. Come join our lucky group of students today. On this course, Stephen brings everything to the table as he shares his favourite dishes and reveals his own personal views, ideas, and techniques on how to make your food shine. Unfailing in his generosity as a teacher, after spending a day cooking with Stephen you’re bound to return to your own kitchen fully inspired.

After just one day in our kitchen, you will not only walk away armed with the skills to make your own crusty white bread (the kind dreams are made of), we’ll show you how to transform this one loaf into a beautiful selection of irresistible variations.

There is something so personal about making your own bread. The choices you make in the fundamental steps of mixing, kneading, and proving can turn a few very simple ingredients into something so much greater than the sum of its parts, something uniquely reflecting your touch. Maybe you love your bread bursting with seeds, prefer little lunch rolls flecked with herbs or want just one signature boule made deeply savoury with caramelized onions . . . whatever the combination, we’ll show you the way there. We’ll also be sure to contrast this versatile, mother-of-breads methodology with other types of bread. Working with quick breads, flat breads, and enriched doughs, we’ll help you better understand the cause and effect of each breadmaking step so that in the future you can achieve exactly the sort of bread you crave. We’ll conclude the day with a lively lunch and glass of wine to mark the beginning of a delicious new chapter ahead of you.

This course will show you how you can take some very simple choices and stack them together to make a big difference in how you feel after you eat. We’ll fill the day with useful ideas that you can weave into your regular diet that will change the way you eat, inspired by tasty staples we think you should always have in stock including pulses, grains, herbs, and spices. You will also leave with a handy little reference manual to help decode food labels and plan portion sizes to ensure you are making the best consumer choices possible. In our kitchen, we believe in the art of moderation. At the end of the day, it’s all about making gentle, uncomplicated additions or smart alterations to create a more nutritious outcome. Here’s to eating well and eating wisely, no science required (we’ll heartily make a toast to that)!

We have had strong links with David Thompson, the first chef to get a Michelin star for Thai cuisine, and his head chef Matthew Albert has been a regular visitor over the years. Lynda has also travelled frequently to London to visit David at his divine restaurant Nahm, to perfect her understanding of authentic Thai stir-fries, curries, and salads and share her knowledge with her students. Join us for the day for a mind-opening foray into this delectable world. The day is also a perfect opportunity to find out where to buy fresh Thai ingredients and how to use them to produce extraordinary dishes. Spend the day with us and we’ll help you stretch your culinary imagination. Before you know it, vegetables will be the star of the show, informing both your appetite and your meals. Come share the day with us and we’ll guide you into an unforgettable season of delicious eating, the natural way. Not only will we work through a menu that truly reflects the best things in bloom all around us right now, we’ll guide you through the what-when-and-how of it all because we understand that knowing what to reach for in the shops is as important as learning how to cook with them well. We’ll not only show you how to push the natural, shining qualities of seasonal produce to the top of the bill (regardless of what’s in season), we’ll:

    • Break down how cooking seasonally in fact means cooking locally
    • Explore the versatility and role of ‘all-season’ staples
    • Explain how you can thoughtfully work outside the what’s-in-season picnic basket and still make all of your efforts count

At the end of the day, it’s not about adhering to a strict formula because we really don’t want this to just be a one-day affair. It’s about following pathways already set before us and making smart compromises so that we’re able to better respect the environment in our daily habits, taste the delicious difference every time we cook, and not break the bank along the way! Now there’s a sustainability plan that we can get behind. Cheers to that!

Bring your senses and imagination to life as we set aside the day to play with fire and flavour.

Learn everything you need to know to coax the best out of your grill this season. We’ll start by going over the groundwork to help you answer these essential questions: What’s the difference between gas and coal barbecues? How do I set myself up for success on both? What tools do I need close at hand and how do I take care of them? And we’ll follow up all the technical talk with live demonstrations, indoor and outdoor hands-on cooking, and wonderful tips to bring everything together so that your next barbecue is a deliciously memorable one. As always, the day is driven by flavour, so you can be sure to look forward to a superb range of ideas, all of which you will sample: from delectably savoury meats to the open-air freshness of perfectly grilled fish, the menu will evoke the best that our summer has to offer us. But a barbecue is not just about the inevitable main-course show-stopper, it’s about the company! Think creative side dishes, happy salads, and addictive sauces to help make the spread complete. Get ready to jump into action today because we don’t hold back, rain or shine. (We think it’s time to start sending out invitations to your next barbecue feast at home!)

Thai food is very close to our hearts here at Dublin Cookery School.

A full Thai meal and a refreshing glass of wine will round off this flavour-filled day.

Let’s keep everything on the table — meat, fish, vegetables — and learn how to incorporate nutritional accents to bring out the best in each.

Who says that fast food can’t be good for you?

Even as chefs, we often find ourselves at the end of our long days desperate for something wholesome that we can simply throw together with the lightest touch. (Or sometimes we’ve just hit a wall during a particularly long stretch in the kitchen and need something to keep us going, and fast!) Whatever your situation, we can relate to the urgency of your fast food needs and as special experts in this field, we have our own favourite go-tos that are as flavourful as they are good for you, dishes that we can very quickly rustle up before we all lose our cool. Today, we’ll share our best-loved, health-happy, peace-keeping quick meals with you. No more desperate food choices or morning-after guilt necessary — we’ll toast to that!

‘Flavour, in Italian dishes, builds from the bottom. It is not a cover, it is a base.’

No one says it better than the great Marcella Hazan and we take her words as a point of inspiration for this course. For us, the heart of Italian cooking is in the ingredients and in the approach. Today, we’ll take you beyond pizza and pasta and go on a tour of some of our favourite regional dishes that you can easily recreate at home with joy. At the end of the day, we will get you quickly suited with a happy aperitivo in hand as you sit down to enjoy a menu that will make you want to linger. Come join our private little festa italiana. Let’s make things lively, warm, and delicious. This will be food that you will want to share and return to over and again.
