The September Timetable for Grown-Ups: Evening Cookery Classes in Dublin

Every September, an Irish household reorganises itself around a list. New copybooks, new subjects, new shoes, new teacher, a new timetable stuck to the fridge door. Everybody in the house is starting something new. And often that’s everyone except the person who bought the copybooks.

There’s no reason they can’t target a September reset too.

Dublin Cookery School runs evening cookery classes in Blackrock all through the autumn. In September alone we have Sushi & Tempura on the 15th, Steaks, Sauces & Sides on the 18th, Modern Vegetarian on the 19th, Discover Korea on the 22nd and Incredible India on the 29th. One evening, one subject, and something you can happily cook again throughout the year.

Here’s what’s coming this term at DCS.

Why do meal plans need a revamp in September?

After a summer of eating out, holiday food, and having some time to explore, our timetables tighten up with school runs, training, matches, homework at the kitchen table, and dinner needed at six thirty. So the meal options rota shrink to the old reliables that we can make with our eyes closed.

September is the month the whole country associates with fresh starts and its the month our cooking can get predictable with the arrival of the school timetable.

The fix? Going back to school. Well, sort of.

The subjects you still remember are the ones you did with your hands

Most of what we were taught at school was learned by rote. Poems, dates, the periodic table, all held in your head until June and then swiftly forgotten once exams were over. For us, the skills and knowledge that survived were the practical lessons, the ones where you learned by actually doing them and making mistakes, and figuring it out with someone who knew what they were doing beside you.

Cooking is that kind of subject. You can read about a hard sear and an aromatic butter-baste but might still be guessing what that actually means. In our kitchen, you’ve a chef at your elbow showing you how, so you’ll know how to do it yourself, at home. Make a pizza dough with someone telling you when its ready, and the recipe turns from words on a page, to something you can feel with your hands.

The September evening timetable

Every class below takes place in our cookery school at 2 Brookfield Terrace, Blackrock, roughly 20 minutes from Dublin city centre by DART or bus. All our classes are a mix of are demo and hands-on, and all levels are welcome. Prices and times are as listed on each course page.

  • Our classes are designed for all levels. Everyone gets support through any technique that's unfamiliar and you'll pick up lots of pointers throughout the evening. The tutors teach in layers and adapt to the room, so you'll be comfortable whether it's your first class or your tenth. Where a class carries a dietary restriction, for example Discover Korea isn't suitable for vegetarians, it's stated on the course page.
  • How long is an evening cookery class in Dublin?
  • Evening cookery classes at Dublin Cookery School start at 19:00 and run either to 21:30 or to 22:00, depending on the class. The exact finish time is listed on each course page. Classes are a mix of demonstration and hands-on.
  • Do the "Original" and "Explore More!" versions have to be taken in order?
  • No. Gourmet Pizza Masterclass, A Taste of Mexico, Incredible India, A Taste of Italy, Pasta Masterclass, Thai Stir-Fries and Spanish Tapas & Paella each run as two separate evening courses with different content. They can be taken in either order, or on their own. In September you can do Gourmet Pizza Masterclass: Original on the 4th and Explore More! on the 28th, or just one of the two.
