This course starts at the butcher's counter, comparing flat-iron and picanha alongside the more classic cuts, before moving through sauces — bordelaise, béarnaise, a charred pineapple-apple chimichurri — and sides that bring personality to the table. The evening glides into the dining room, sitting down to enjoy all your hard work with a couple of glasses of full-bodied red wine or cold beer. This turns a class into an occasion.

We’ll isolate basic techniques and work out specific ingredients for you to practice on so that we can zoom in on the areas where you need extra support. The tutors will liaise with you, identify where you're compensating for bad technique, and support you to help fix it. All activities build towards a wonderful lunch – so we'll keep you fueled so that you stay sharp!
