Each team gets the same pantry — condiments, spices, aromatics — and a brief: develop an original BBQ sauce. Your menu will be confirmed in advance (American smokehouse, Asian-inspired, Middle Eastern, or another deliciously customised theme), and all you have to do is develop, taste, and adjust. Then pitch your sauce to the team and the DCS tutors will judge and choose the winner.

Fire management: how to maintain a charcoal fire, the difference between direct and indirect heat, when and how to baste, and how low-and-slow smoking changes a result. These aren't instinctive skills - most people who consider themselves competent BBQ cooks have been guessing at temperature and timing for years.
Outdoor cooking doesn't behave predictably — wind, coal variation, ambient temperature all matter. Teams learn to assess what they're seeing and smelling rather than purely watching a timer.

The kitchen at 2 Brookfield Terrace is a working professional kitchen. Not a function room with equipment hired in for the occasion — the same space our students use for evening classes and full-week courses, with the same tutors running both. - The Signature Sauce challenge is an optional add-on for the Smoke & Sizzle BBQ event. Teams are given the same ingredients and tasked with developing an original BBQ signature sauce from scratch. They develop, taste, and refine it — then pitch it our DCS tutors before the winner is announced. Best sauce and best pitch wins.
