To prepare the Kale, Beetroot, Celeriac & Apple Salad
Step 1: Prepare the Vinaigrette
- Bring the sugar, vinegar, and star anise to the boil.
- Remove from the heat and allow it to cool.
- Once cooled, remove the star anise and whisk in the olive oil and walnut oil.
Step 2: Prepare the Salad Ingredients
- Squeeze some lemon juice over the apples and celeriac to prevent oxidation.
- Place the celeriac, beetroot, apples, and kale in a large mixing bowl.
Step 3: Dress the Salad
- Pour the desired amount of vinaigrette over the salad ingredients.
- Toss the salad gently to ensure an even coating of the vinaigrette.
- Serve immediately for the freshest taste.
Ingredients
- 1 celeriac, peeled and cut into julienne
- 4 or 5 beetroot, peeled and cut into dice
- 2 cox pippin apples (or granny smiths), peeled, halved, cored and cut into julienne strips
- 1 handful of kale, cut into strips
For the Vinaigrette:
- 100ml sherry vinegar
- 50g sugar
- 1 star anise
- 100ml light olive oil
- 50ml walnut oil
